- 900g/2lb Kale or Collard Greens, washed and trimmed
- 50g/2oz Bacon Fat
- 1 Garlic Clove, crushed
1. Shred the kale or greens finely and place in a large bowl. Pour plenty of boiling salted water over them and allow to stand for 5 minutes, then drain thoroughly.
2. Heat the bacon fat in a large frying pan with the clove of garlic, add the kale and sauté for 2 minutes.
3. Season to taste with salt, cover the pan, and cook for 15 minutes until the kale is tender. Discard the garlic and serve immediately.
